Pai Mu Tan, also known as Bai Mu Dan, is one of the gentlest teas there is. A Chinese white tea made from soft young leaves and silvery unopened buds, it's barely processed, which is exactly the point. The result is a pale, golden cup with a fresh, delicate character, a quiet, understated tea for unhurried moments.
Tasting Notes
The cup is light and clear, pale gold in colour, with a soft, delicate flavour that unfolds slowly. Expect gentle floral notes, a natural sweetness, and a smooth, mellow finish that stays soft and light. It's subtle by nature, a tea that rewards attention and a calm moment rather than a strong first impression.
White Peony
Pai Mu Tan means white peony, a nod to the plucked leaf-and-bud sets that open in the cup. White tea is the least processed of all teas: the leaves are simply withered and dried, with no rolling or firing, which is what keeps the flavour so soft and close to the fresh leaf. Those silvery buds, covered in fine white down, are the signature of the style and the source of its gentle sweetness.
Brewing
Heat fresh water to 90 °C, below boiling, and steep 2.5 g of leaves (a generous teaspoon, since the leaves are light and fluffy) for 3½ minutes. White tea is forgiving and gives a pleasant second steep.
