ABOUT COCONUT SUGAR
Another interesting fact is that coconut sugar does not come from the actual nut. Its made from the sap of the flowers that grow on coconut palms. That’s why you don’t get that characteristic coconut flavor.
It’s also good to know that coconut palm is never cut down to harvest the sap. Instead, the cultivators climb to the top of the trees to do so. Lots of work goes into creating this delicious sugar! Also, unlike cane sugar, coconut sugar is not grown in monoculture. That is, there are no areas cleared just for that which allow for biodiversity in the plantations.

IN TERMS OF TASTE
Contrary to what one might think, coconut sugar tastes nothing like coconut. In fact, it actually tastes more like dark brown sugar. You can also detect notes of caramel and a hint of molasses.
It's a treat in the kitchen and a great option for sweetening your coffee!
WHAT LEAD US TO SOURCING COCONUT SUGAR
In 2012, we started to do extensive research on various sugars and discovered that certain refined white sugars were filtered with black charcoal. A charcoal made of charred animal bones. Upon discovering this, we wanted to source vegan alternatives.
