About Our TAG* Roast

With over four decades of expertise in green bean selection, roasting, and cupping, our TAG Roast (Torrefazione Artigianale Granito) is crafted to bring out the fullest potential of each single-origin coffee. Through a meticulous roasting process, we achieve the complete caramelization of the sugars in the beans, unlocking their rich, complex flavors. This artful transformation relies on the perfect balance of expertise, passion, intuition, and the keen insight of our Master Roaster.

About The Plantation

Nestled in a splendid tropical ravine, surrounded by crystal-clear rivers and perched on a slope between 2,000 and 3,000 feet above sea level, stands the magnificent Blue Baron Estate. In all, 55 hectares of land ideal for the production of Blue Mountain coffee.

Persistent clouds provide natural protection for coffee trees, providing shelter from the sun's rays. The low ambient temperature and relative humidity induced by the cloud cover contribute to the slow maturation of the coffee beans, enhancing the resulting unique fineness of the coffee.
