About Our TAG* Roast

With over four decades of expertise in green bean selection, roasting, and cupping, our TAG Roast (Torrefazione Artigianale Granito) is crafted to bring out the fullest potential of each single-origin coffee. Through a meticulous roasting process, we achieve the complete caramelization of the sugars in the beans, unlocking their rich, complex flavors. This artful transformation relies on the perfect balance of expertise, passion, intuition, and the keen insight of our Master Roaster.

About the Plantation

Originating from the Mandheling region of Sumatra, this coffee is grown at high altitudes in the island’s tropical climate. Its unique Washed with Fermentation process is renowned for producing clean and vibrant flavor profiles. In this process, the coffee cherries are first washed to remove the outer pulp. Once the pulp is removed, the beans are fermented in water for a specific period, allowing the mucilage—a sticky, fruit-derived layer—to break down.

After fermentation, the beans are thoroughly washed again to remove any remaining mucilage before they are dried. Once dried to the ideal moisture level, the beans are hulled to remove the parchment layer, preparing them for packaging.
