About Our TAG* Roast

With over four decades of expertise in green bean selection, roasting, and cupping, our TAG Roast (Torrefazione Artigianale Granito) is crafted to bring out the fullest potential of each single-origin coffee. Through a meticulous roasting process, we achieve the complete caramelization of the sugars in the beans, unlocking their rich, complex flavors. About The Plantation

This coffee is grown on the southern slope of the Antigua Valley in the Huehuetenango region, which boasts some of the richest volcanic soils in the world.

Preserving the natural state of the plantation is a priority for the owners. This is under very strict shade control allowing the coffee trees to receive the perfect dose of sun. The cherries are then picked from December to April, processed, and washed in a traditional mill with crystal-clear water. The beans are then sun-dried for several days on concrete patios, giving each their distinctive greenish-blue color.

Part of a regional Coop, the plantation has been managed by Mr. Ricardo Zelaya, fourth generation of the Zelaya family, since 1988.
