About Our TAG* Roast

With over four decades of expertise in green bean selection, roasting, and cupping, our TAG Roast (Torrefazione Artigianale Granito) is crafted to bring out the fullest potential of each single-origin coffee. Through a meticulous roasting process, we achieve the complete caramelization of the sugars in the beans, unlocking their rich, complex flavors. This artful transformation relies on the perfect balance of expertise, passion, intuition, and the keen insight of our Master Roaster.

About The Plantation

Produced on San Cristóbal Island in Ecuador’s Galápagos archipelago, this 100% Arabica coffee—primarily Bourbon and Typica—is grown in fertile volcanic soils tempered by the cooling influence of the Humboldt Current. Farms are typically situated between 130 and 350 metres above sea level, where persistent cloud cover and mild temperatures slow cherry maturation. The coffee is shade-grown and organically cultivated, resulting in a clean, well-balanced cup with lively fruit acidity, delicate floral and citrus notes, and a naturally sweet, layered finish.
