About the Plantation
Organically grown on San Cristóbal Island in Ecuador’s Galápagos archipelago, this 100% Arabica coffee—primarily Bourbon and Typica—is cultivated on rich volcanic soils influenced by the cool Humboldt Current. The farms, located between 130 and 350 meters above sea level, benefit from constant cloud cover and mild temperatures that slow cherry maturation and promote dense, uniform beans. Shade-grown and organically managed, these green beans have consistent size and moisture, ideal for roasting. Their natural complexity allows roasters to highlight vibrant fruit notes, subtle floral undertones, and a well-balanced sweetness, depending on the chosen roast profile.
