Raspberry

Chocolate and raspberry is an old romance – the dark and the bright, the rich and the tart. This hot chocolate plays it straight: Dutch-process cocoa and golden cane sugar, lifted by a fruity raspberry note that keeps the cup from feeling heavy. We blend it in Montréal, and it comes without milk, so the cup is yours to build – whole milk for something indulgent, oat or almond for something lighter. The chocolate leads, the berry follows, and the finish stays clean and bright.

Suggested Uses

It's a lovely after-dinner cup, especially in place of a fruit dessert, and it has a romantic streak that suits a quiet evening for two. For a mokaccino, stir a shot of espresso into the finished cup.

Preparation

Add 2 tbsp (15 g) of hot chocolate powder to 1 cup (250 ml) of hot milk and stir until smooth. For extra froth, fill your cup halfway with hot milk and stir to dissolve, then froth the remaining milk and combine.
