India Monsooned Malabar AA is a Typica from the Shevaroys at 1,600 m, offered in 20 kg bulk and Kosher certified. The monsooning treatment defines its character more than its origin alone: a post-processing exposure to monsoon conditions that produces a structurally enlarged, low-acid bean unlike most washed coffees. Roasters working with espresso blends or differentiated single-origin programs will find the full body and negligible acidity a consistent and useful asset.

Cupping Profile

The cup is full-bodied and creamy, with very low to negligible acidity. Primary notes at medium development typically include cedar, tobacco, earth, and dark chocolate, with a long, dry finish. AA grading (screen 17 and above) ensures bean density is consistent across the lot, which contributes to even extraction and a predictable result across espresso and filter applications.

Processing

Following initial wet processing, the green beans are exposed to southwest monsoon winds and humidity for several weeks. This step, which originated from the changes coffee underwent during months-long colonial-era sea transit, causes the beans to swell, absorb moisture, and shed original acidity. The finished bean is physically enlarged and pale yellow, with moisture and density characteristics that differ materially from a conventional washed coffee.

Roast Guidance

A medium to medium-dark roast suits this coffee well. The expanded cell structure from moisture absorption accelerates development relative to a conventional washed coffee. Monitor the rate of rise through first crack and avoid prolonged post-crack development to prevent uneven extraction. This coffee is an effective blend component where body and low acidity are the objective; as a single-origin espresso at medium-dark, the earthy, spiced, and chocolate notes are most clearly expressed.
