Dutch-process cocoa is the baker's cocoa: alkalized to round off the sharp edge of natural cocoa into something smooth, dark, and mellow. Ours is pure and unsweetened, with the deep colour and even chocolate flavour the process is known for.

Preparation
Because Dutch-process cocoa is alkalized and pH-neutral, use it in recipes that call for Dutch cocoa or that lean on baking powder rather than baking soda. For a drink, start with a tablespoon in hot milk or coffee and sweeten to taste.
