Our Ceremonial grade matcha begins with Gyokuro Asahi, a cultivar grown under shade canopies in Japan. Shade growth concentrates chlorophyll, deepens colour, and develops the smooth, grassy sweetness that distinguishes the grade. Stone-ground into an ultra-fine powder, it carries the vivid green colour and rich umami character the style is prized for.
Tasting notes
Shade cultivation suppresses bitterness and amplifies the natural sweetness of the leaf. The result is a matcha that is bold and full-bodied without astringency - smooth on the palate, with a clean, lingering finish. The colour holds deep in the cup: a saturated, grassy green that signals the quality of the leaf.
Suggested uses
Ceremonial grade is suited to traditional preparation - whisked in a chawan, served straight, and savoured without additions. It performs equally well as the base of a morning matcha latte, or as a quiet ritual at any point in the day. The quality of the leaf is present in every cup.
Preparation
- Sift 1 tsp of matcha powder into a tea bowl (chawan).
- Add 60 ml of hot water at 80°C — not boiling.
- Whisk briskly in a zigzag (M or W) motion using a bamboo whisk (chasen) until frothy.
- Enjoy immediately.
Tip: Use filtered water and warm the bowl before preparing for best results.
