Matcha is green tea in its most concentrated form: whole leaves stone-ground into a fine powder and whisked straight into the cup, so you drink the leaf rather than an infusion of it. Our Ceremonial Matcha is a Japanese green tea powder of a deep, vivid green, the grade made for drinking straight and for the quiet ritual of whisking a bowl by hand.
Tasting Notes
Shade-grown leaves give ceremonial matcha its smooth, full-bodied character and natural sweetness. The cup is rich and grassy, with a savoury umami depth and a clean, lingering finish, smooth on the palate from first sip to last. The colour holds deep and saturated in the bowl, a grassy green that signals the quality of the leaf.
Origin
Our matcha comes from Kyoto Prefecture, the historic heart of Japanese tea. There, the plants are shaded for weeks before harvest, which concentrates chlorophyll and deepens both colour and sweetness. The finest leaves are then stone-ground into powder to preserve their full richness. As a family tea importer in Montréal since 1978, we bring it here with that craft intact.
Preparation
Ceremonial grade is made for traditional preparation, whisked and served straight, though it also makes an excellent base for a morning matcha latte.
- Sift 1 tsp (2 g) of matcha into a tea bowl (chawan) to remove any clumps.
- Add 60 ml of hot water at about 80 °C – hot, not boiling.
- Whisk briskly in a zigzag "W" or "M" motion with a bamboo whisk (chasen) until frothy.
- Drink straight away, while the froth holds.
Tip: Warm the bowl and use filtered water for the best result.
