There's a reason the café mocha became a fixture: coffee and chocolate belong together. This hot chocolate borrows that idea, pairing dark Dutch-process cocoa and golden cane sugar with a warm, roasted coffee note – the taste of a mocha, no barista required. We blend it in Montréal, and it comes without milk, so the cup is yours to build – whole milk for something rich, oat or almond for something lighter. The result is smooth and mellow, with just enough coffee character to make it feel like an afternoon treat.
Suggested Uses
This is the cup for the late-afternoon lull, when a second coffee feels like too much but you still want something warm and a little grown-up. It's lovely on its own, or after dinner in place of dessert. For a mokaccino, stir a shot of espresso into the finished cup.
Preparation
Add 2 tbsp (15 g) of hot chocolate powder to 1 cup (250 ml) of hot milk and stir until smooth. For extra froth, fill your cup halfway with hot milk and stir to dissolve, then froth the remaining milk and combine.
